Vijay Idli rava
Water
Urad dal
Make a fine batter with Urad Dal.
Take a bowl and add Viajy Food Idli Rava
Mix the urad dal batter with the idli rava to make the idli batter
Steam it for a while and now the soft idli is ready
Let it sit for a while and now your idli batter is ready.

Suji Twister
Ingredients
2 Cup of Vijay Gold Bombay Suji
Pinch of Salt
Black pepper ½ tsp
½ kettle Warm water
400ml oil for fry
Procedure
Grindn the Vijay Bombay Suji nicely in the mixer for few minutes
Now in a bowl add salt, blackpepper, kasuri methi , 1tsp oil. mix well
Now add Warm water and kneed a tight dough
Rest the dough for 10 minutes
Now with a help of a fork Give it a shape as per shown in the video
Fry it well. Enjoy with Tea or coffee.
Tips for Cooking
Deep Fry the dough to have it crispy
You can store it for 1 week in a air tight jar.

Falafel Waffle
Made using Vijay Foods Besan, gluten-free, flavourful and amazingly tasty Falafel waffle gives a healthy and delicious twist to the classic deep-fried falafels.
Ingredients
2 cups of cooked chickpeas
1 cup of Vijay Gold Besan/ gram flour
1/2 finely chopped onion
1/2 carrot grated
3 cloves of garlic
1 tsp cumin seeds
Salt to taste
A bunch of coriander leaves finely chopped
1 tsp of black pepper powder
1 tsp of Red chili powder
1 tsp of Coriander Powder
2 tbsp of lemon juice
1 tsp of baking powder
Procedure
To prepare the falafel batter blend chickpeas, onions, garlic, cumin seeds to get a smooth batter
Add besan, all the spices, baking powder and coriander leaves. Let it rest for 1 hour.
Now preheat the waffle maker, grease it with oil, pour batter in each cavity.
Cook for 15- 20 minutes or till they turn crispy and golden brown from edges.
Serve these falafel waffles with a generous drizzle of hummus and veggies salad. Enjoy!
Tips for Cooking
Garnish the waffle with the sauce and chopped mint or parsley.

Ingredients
140 gm / 1 cup Vijay Gold Thick Avalakki
250 gm / 2 medium Potatoes
100 gm / 1 cup Paneer
70 gm / 1 small Onion, finely chopped
10 gm / 2 green chillies, finely chopped
5 gm / few sprigs Coriander leaves, finely chopped
5 gm / 1 tsp Ginger Garlic Paste
4 gm / 1 tsp Mastercook Dhania, powdered
2 gm / ½ tsp Mastercook Jeera, Powdered
3 gm / ¾ tsp Red Chilli Powder
1 gm / ¼ tsp Garam Masala
1 gm / ¼ tsp Mastercook Pepper, powdered
1 gm / ¼ tsp Amchur powder
Salt to taste
Procedure
IServe warm with your favorite chutney.
Fry on a low flame until golden brown on both sides. Set on a tissue to drain excess oil.
Form the dough into about 50 gm cutlets. Set on a plate.
Check to see if you can form crack free cutlets. If not you can add a little flour or corn flour to aid with binding.
Knead and mash the mixture well to combine thoroughly.
Add the onion and coriander leaves along with all the spices, lemon juice and ginger garlic paste
In a large bowl, grate the paneer and add the boiled potatoes, and the Avalakki after draining the excess water.
In a small bowl, add the Vijay Gold thick Avalakki and cover it with water. Allow to soak for 5 minutes.
Boil the potatoes until soft, peel and mash gently, set aside.
Tips for Cooking
The Avalakki must be drained well before adding to the mixture. You can use a strainer and press lightly to rid the excess moisture.
You can add other vegetables like carrot, beans or capsicum to it, but ensure it is diced very fine or the cutlets will break while shaping.
You can prepare these in advance and freeze them in a single layer. Once thoroughly frozen, you can store them in ziplock bags and fry whenever you’d like!

Ingredients
For Dhokla :
75 gm / ¾ cup Vijay Gold Thick Avalakki
50 gm / ½ cup Mastercook Bombay Sooji
200 gm / ¾ cup Yogurt
250 ml / 1 cup Water
3 gm / 1 tsp Salt
5 gm / 1.5 tsp Fruit Salt (ENO)
For tempering :
2 gm / 1 tsp Mustard Seeds
10-12 curry leaves
1 green chilli
Procedure
In a blender, grind the Vijay Gold Thick Avalakki into a fine powder. Transfer to a bowl.
Add the Mastercook Bombay Sooji, Yogurt, Salt, and 200 ml / ¾ cup of Water
Mix well and set aside for 15 minutes.
Set up your steamer to heat up.
Grease a 6*6 square pan and set it aside.
After 15 minutes, add the remaining 50ml of water and mix well.
Sprinkle the fruit salt on top and add a splash of water to activate it.
Whisk gently but thoroughly and pour immediately into the prepared pan.
Steam for 20-30 minutes till firm and a knife inserted comes out clean.
As it cools down, prepare the tempering by spluttering the mustard seeds in oil, then add the curry leaves and green chili. Pour this on top of the dhokla, slice and serve.
Tips for Cooking
Have your pan and steamer ready to go before you add the fruit salt, since once it’s added the reaction lasts for a few minutes after which it settles down.
